Easy Peasy Weeknight Dinner
This wasn’t so much a planned meal as a case of ‘hey, what’s in the fridge that I can throw together quickly?’ After a long day of work, the hassles of my commute, and then a successful completion of day three of C25K, I wasn’t in the mood to put in much of an effort.
Chicken breast sauteed in butter, steamed broccoli, sauteed red bell pepper. A bit more butter (for flavor as much as to keep the fat macros in line), a squeeze of lemon and some parmesan cheese. Sea salt and black pepper (of course). 20 minutes of cooking (including prep) and a big bowl of around 6 net carbs. Not too shabby.
